Salmon Tacos with Lime Slaw and Mango Salsa

Do you know what i hate about the weekend? The fact that it's so short and goes by so fast! Oh it's so annoying! It's currently Sunday evening but I wish it was a Friday. I have so much to do tonight (test a recipe for SPU's Community Kitchen, write an essay, start research for a research paper and write a long and boring personal statement, and sooooo much more) but I'm starting my Sunday evening off with a blog post (like i have nothing else important to do…) *sigh*. Weekends are too short.
Anyway, I'll just cut to the chase, because I know no one reads my long essays, and because I know you're dying to know more about that beautiful picture you're staring (and drooling) at right now ;) I found the recipe here but i did make quite a few changes to it. If you haven't already noticed, I love making changes to things. So for one of my classes, we were to chose and prepare a heart healthy dish and my group and I decided to make salmon tacos. We thought they'd be fun and a little different than just baking salmon (which is sooooo boring….haha jk). So we made them and oh they were SO good. Incredibly good. We got a lot of compliments from our class mates. So I decided to make these again at home, and again, they were awesome! This dish was eaten by over 20 people. So yeah. It's good.
The salmon has a nice flavor. In class we baked the salmon but at home I grilled it. Either way, it was delicious. The lime slaw was nice and tangy and the mango salsa was out of this world! My favorite part about this dish was the salsa. It is sweet and tangy and savory. It's a bit different than your usual tomato-salsa, but it's super delicious! (Goes great with tortilla chips as well).
These salmon tacos are super healthy as well! Salmon is full of heart healthy fats, the lime slaw and mango salsa give you loads of different vitamins and minerals and the corn tortillas give you a serving of whole grains (which has a plethora of benefits). These are much better than the usual beef and cheese tacos everyone is used to. Plus, they're a little different. So give them a try on your next Taco Tuesday (or any day really.)

Salmon Tacos with Lime Slaw and Mango
Salsa
Ingredients:
For the salmon:
- 1 ½ lbs salmon filet, with skin on
- 1 ½ tsp chili powder
- ¼ tsp salt
- ¼ tsp sugar
- ½ tsp cumin
- 8 small corn tortillas
For the slaw:
- 10 oz shredded cabbage (about half a head)
- 4 green onions, thinly sliced
- Handful chopped cilantro
- 1/3 cup mayonnaise
- 2 Tbsp freshly squeezed lime juice, about 1-2 limes
- 1 tsp sugar
- Pinch of salt and chili powder
For the salsa:
- 1 mango, skinned and diced
- ½ cup diced red onion
- ½ cup diced red bell pepper
- Handful chopped cilantro
- 1 tsp olive oil
- 1 jalapeno pepper, seeded and minced
- 1 lime juiced
- Pinch of salt
Directions:
- Pat the salmon dry. Combine the chili powder, sugar, salt and cumin in a small bowl and sprinkle over the surface of the flesh-side of the salmon. Set aside.
- Prepare the slaw. Whisk mayo with lime juice, sugar, salt and chile powder in a large bowl. Add the cabbage, cilantro and onions and toss well to coat with the lime dressing. Cover and refrigerate.
- Prepare the salsa. Combine all ingredients in a medium bowl. Taste for seasoning, cover and refrigerate.
- Spray the grill with cooking spray and light a medium-hot flame. Place salmon skin side down on the grill, cover and cook for about 5 minutes, depending on the thickness of the fish (cook fish about 10 minutes per inch of thickness). Flip salmon over, peel off the skin and cook for 3 minutes more, or until the fish flakes easily with a fork. Remove from heat and place it pink flesh up on a plate.
- Place the corn tortillas on the grill for a few seconds a side to warm up. Flake fish and divide evenly between the tortillas. Top with lime cilantro slaw and mango salsa. Serve immediately with lime wedges.
